One of our favourite producers of 2025 is back at Wonderland Coffee.  This one has the same rich taste, but with sweet maple syrup offset by the creamy cocoa and juicy orange.

Rancho Morelia sits on the southern slopes of the Sierra Madre, inside the El Triunfo Biosphere Reserve in Chiapas. Coffee has been part of the farm’s story for decades, and since taking over in 2005, producer Jaime Cardenas has continued the work started by his father, keeping the focus on careful cultivation and steady quality. Cherries are picked by hand and taken straight to the farm’s small wet mill, where fermentation begins the same day.

This lot goes through an extended washed fermentation, which gives the coffee a cleaner structure and helps the fruit notes show more clearly. Once washed, the parchment dries on open patios for around 15 days before heading to Edelmira Coffee, a local dry mill that prepares the coffee for export.
